Blueberry Sun Tart ☀️
A stunning pastry shaped like a radiant sun, made with two sheets of buttery puff pastry filled with luscious blueberry jam and sprinkled with toasted almonds. It looks absolutely impressive, yet it's surprisingly simple to make — the kind of recipe that earns you compliments without keeping you in the kitchen all day.
Ingredients
- 2 sheets of puff pastry (pure butter, if possible)
- 4 generous tablespoons of blueberry jam
- 30 g sliced almonds
- 1 egg yolk
- 1 tablespoon water
- Powdered sugar, for finishing
Instructions
Step 1 — Preheat the oven
Set your oven to 180°C (350°F) and line a baking sheet with parchment paper.
Step 2 — Layer the first pastry
Unroll the first sheet of puff pastry onto the prepared baking sheet. Spread the blueberry jam evenly across the entire surface, leaving a small 1 cm border around the edges so the filling doesn't leak out during baking.
Step 3 — Add the almonds
Scatter the sliced almonds over the jam in an even layer. They'll toast beautifully in the oven and add a lovely crunch to every bite.
Step 4 — Top with the second pastry
Carefully place the second sheet of puff pastry on top, aligning it with the bottom layer. Press the edges firmly together with your fingers or the tines of a fork to seal them completely.
Step 5 — Shape the sun ☀️
This is where the magic happens! Place a small bowl or round cookie cutter in the center of the pastry as a guide. Using a sharp knife, cut 16 evenly spaced rays radiating outward from the center — like the beams of a shining sun. Then, take two adjacent strips and twist them away from each other, flipping them outward so the layered pastry and vibrant purple jam are beautifully revealed. Repeat all the way around until every ray is twisted into a gorgeous sunburst pattern.
Step 6 — Apply the egg wash
Whisk the egg yolk with one tablespoon of water until smooth. Brush the entire surface generously with this golden wash — it's what gives the tart its gorgeous shiny, amber color as it bakes.
Step 7 — Bake
Slide the tart into the preheated oven and bake for 25 to 30 minutes, until the pastry is deeply golden, puffed, and irresistibly flaky. Keep an eye on it toward the end — you want a rich color, but not burnt edges.
Step 8 — Finish and serve
Allow the tart to cool slightly on the baking sheet. Just before serving, dust it with a snowy blanket of powdered sugar for that extra touch of elegance. Slice along the rays and serve warm.
