Homemade Hot Chocolate
Nothing beats a rich, comforting mug of hot chocolate made from scratch on a chilly day. Unlike store-bought mixes that rely on powdered milk and artificial flavors, this classic recipe uses real chopped dark chocolate and whole milk to create a smooth, velvety texture with a deep chocolate flavor. It comes together in just under ten minutes and can easily be customized to your preferred sweetness.
Prep time: 2 minutes
Cook time: 5 minutes
Servings: 2
Ingredients
2 cups (480 ml) whole milk
100g (3.5 oz) good quality dark chocolate (60% to 70% cocoa), finely chopped
1 to 2 tablespoons unsweetened cocoa powder
1 to 2 tablespoons brown sugar or maple syrup (adjust to taste)
1/2 teaspoon pure vanilla extract
A pinch of salt
Instructions
Heat the base: In a small saucepan, combine the milk, cocoa powder, sugar, and salt over medium-low heat. Whisk until the cocoa powder and sugar dissolve and the milk is warm (do not let it boil).
Melt the chocolate: Add the finely chopped dark chocolate and vanilla extract to the saucepan.
Whisk until smooth: Whisk constantly for 2 to 3 minutes until the chocolate is completely melted and the liquid is smooth and creamy.
Serve: Pour into two mugs and serve immediately. Top with whipped cream or mini marshmallows if desired.
Tips for Success
Use chopped chocolate, not chips: Real chocolate bars melt much smoother than chocolate chips, which contain stabilizers that affect the texture.
Richness tweak: Substitute 1/2 cup of milk with heavy cream or canned coconut milk for an extra thick, European-style hot chocolate
Cream Cheese Cinnamon Roll Frosting
This classic cream cheese frosting uses Philadelphia cream cheese to add a rich, tangy flavor that perfectly balances the sweetness of warm cinnamon rolls. Spreading it on warm rolls allows it to melt slightly into every spiral.Prep time: 5 minutesYield: Enough for 12 large cinnamon rolls
Ingredients
115g (4 oz / 1/2 block) Philadelphia cream cheese, softened to room temperature
55g (1/4 cup / 4 tbsp) unsalted butter, softened to room temperature
180g (1.5 cups) powdered sugar (confectioners' sugar)
1 teaspoon pure vanilla extract
1 to 2 tablespoons milk or heavy cream (optional, for thinning)
A pinch of salt
Instructions
Beat the cream cheese and butter: Place the softened Philadelphia cream cheese and unsalted butter in a medium mixing bowl. Use an electric hand mixer or stand mixer to beat them together on medium-high speed for 2 to 3 minutes until smooth, light, and creamy.
Add flavorings: Add the vanilla extract and a pinch of salt to the cream cheese mixture. Beat for another 30 seconds to combine.
Incorporate the powdered sugar: Reduce the mixer speed to low. Gradually add the powdered sugar, a half-cup at a time, mixing well after each addition to prevent sugar dust from flying out.
Whip until fluffy: Increase the speed to medium and beat the frosting for 1 to 2 minutes until it is light, fluffy, and completely smooth with no lumps.
Adjust consistency: If the frosting is too thick to spread easily, add milk or heavy cream one teaspoon at a time until you reach your desired texture.
Apply to rolls: Spread the frosting generously over warm cinnamon rolls right after they come out of the oven so it melts slightly into the crevices.
Tips for Success
Room temperature is key: Ensure both the Philadelphia cream cheese and butter are fully softened before mixing to avoid a lumpy frosting.
Storage: Any leftovers can be stored in an airtight container in the refrigerator for up to 5 days. Bring it back to room temperature before spreading.
